One of my husband’s favorite blogs is The Art of Manliness. I highly recommend it to any and all men- husbands, boys, single guys, old folks. It’s so practical and fun and manly. There is a series on there about Benjamin Franklin’s pursuit of a virtuous life. It is something that we decided to do as a family, focusing on one virtue a week. You can read the whole series here. I won’t be blogging about each week, though I may mention it sometimes. Cause when ya find something this good ya just gotta share it, you know?
Anyway, that first virtue is about not eating or drinking too much. Yesterday I discovered a recipe that is DELICIOUS. The best fish dish I’ve ever had in my life.
I had to share. It’s so simple and satisfying.
But no promises it will help in your endeavor to not eat too much.
Parmesan Crusted Salmon
adapted slightly from this recipe.
Total time: 20 mins
4 salmon filets
1/4 cup mayonnaise
1/3 cup fresh grated parmesan
1/2 teaspoon garlic powder (or more, depending on your garlic palate)
1 teaspoon dried chives
Salt and pepper to taste
1. Heat oven to 450 F.
2. Grease baking sheet.
4. Lay filets down on baking sheet and cook for 8 minutes.
5. Take filets out of the oven and cover in parmesan mixture.
6. Turn your broiler on low and put the parmesan salmon back in the oven. Bake until the parm starts to brown, about 5 minutes. Keep a close eye on the dish to make sure it does not burn.
7. Take out of oven, plate, and enjoy!
I served this with butter rice and a side salad. It was the bomb.
